From P'Mong of Yang Yuen Farm, this coffee showcases the full potential of beans from Haui Kwak Village, Nan crafted with care from origin to final cup.
Ripe red cherries are carefully selected and fermented using Semi-Carbonic Maceration at a pH of around 4.7, enhancing brightness and complexity. Expect layers of citrus acidity, crisp apple, and delicate white florals.
After depulping and a short dry fermentation, the coffee is washed and demucilaged, then dried under Low Temp, Low Humidity (LTLH) to gently develop a smooth, rounded flavor.
The result is a cup thats clean, vibrant, and balanced where refreshing acidity meets gentle sweetness, reflecting both craftsmanship and a sustainable approach to Thai coffee.
