This is our new specialty coffee that everyone helped name CALM (Yeast x LTLH Process).
Tasting notes: Peach, lemon, apple, floral nectar-like sweetness, soft acidity, smooth and easy to drink very, very good!
The fermentation and drying technique we developed this year brings complexity, layered flavors, high balance, and a long-lasting, bright sweetness all of which are beautifully expressed in this cup.

VARIETALS: Typica, Bourbon, Catimor [1,200-1,400 masl]
PROCESS: Yeast - Dry process x LTLH drying Technique
ROAST LEVEL: Light
CUP PROFILE: Peach, lime peel, red apple, nectar, very clean and smooth with long lasting sweet.
RECOMMEND: Filter (87-90°C), espresso and iced-drip
