Introducing “Huai Khwak” by Phi Mong — Huai Khwak Washed-SCM x LTLH.
This new harvest coffee is not a product of chance. It is the result of accumulated time, generations of shared knowledge, and countless rounds of experimentation and refinement.
Behind this coffee is Phi Mong (Wittaya Paisansak), a pioneer who has spent more than half of his life dedicated to coffee and the Thai coffee community. For over four decades, he has worked to promote sustainable coffee cultivation in the forests of Nan Province, believing that coffee is more than an economic crop—it is about people, forests, and the future of local communities.
Nestled at 1,200–1,300 meters above sea level, Huai Khwak Village provides an ideal environment for coffee cultivation. Cool temperatures, misty mornings, seasonal rains, warm sunshine, and the rhythm of nature slowly nurture each coffee tree. As no two seasons are ever the same, each harvest carries its own unique story.
This lot is processed using a combination of Washed and Semi-Carbonic Maceration (SCM) techniques to enhance complexity and depth of flavor, followed by LTLH (Low Temperature, Low Humidity) drying to preserve bean quality and clarity.
The result is a clean, vibrant cup with balanced complexity. Expect notes of lime, green tea, and delicate apple, leading to a juicy sweetness that lingers pleasantly long after each sip. It is approachable, enjoyable, and full of character.
