Yeast processing is a specialized technique at Preda. We utilize a specific strain of Saccharomyces cerevisiae for Dry Fermentation, controlling every dimension of the process:
• Fermentation Progress: Monitoring Brix levels and microbial activity.
• LTLH Signature: Our "Low Temperature Low Humidity" drying system preserves volatile aromatic compounds often lost in traditional drying.
• Origin Excellence: Sourced from the high altitudes of Doi Pukkood, Mae Hong Son.
