How many seconds should a Doppio shot flow to taste good?
This morning, Uncle Kee asked a trainee barista to make a doppio shot, but the taste was off, so he asked for a new one. However, it still came out bitter and astringent.
Then, we switched to Pam, the trainer, and everything came back to normal. The #GoBlend shot was smooth, rich, and had the caramel aroma just as it should.
So, whats the difference between the trainee and Pams shots?
They used the same coffee dose (20 grams) with the same fine grind, but the difference was in the tamping method.
The trainee tamped too lightly, while Pam applied more pressure but without being forcefulfirm yet gentle.
As a result, the flow rate of the coffee from the portafilter was different:
Light tamp = faster flow (50cc/16 seconds), resulting in a bitter, astringent taste and light body.
Firm, gentle tamp = slower flow (50cc/27 seconds), resulting in a smooth taste with a full body.
From experience, even if the shot flows for over 30 seconds, the coffee can still taste smooth and good without burning. However, if it flows too quickly, it will always taste bitter and astringent.
To sum up, Go Blend is still delicious and remains our house blend at the cafe.
