Have you ever wondered why coffee tastes sour?
Coffee is a type of fruit, and we harvest the ripe red cherries to process. There are many different coffee varieties, such as Yellow Catimor. Each type of coffee has its unique characteristics. The method of tasting coffee, called cupping, allows us to sense its sweetness, sourness, bitterness, astringency, and fruity aromas through our senses. One of the defining characteristics of coffee is its acidity.
But is acidity good?
Acidity is a type of acid, and if we use cold brew methods, the acidity will be lower compared to hot brewing. The level of acidity is measured by pH (the acidity-alkalinity balance). Coffee typically has a pH of around 5, while wine (often used as a comparison standard for coffee) has a pH of around 3-4. As you can see, coffee has a lower acidity than wine, making it better for the body (considering just the acidity level).
One of the benefits of acidity that I really enjoy is its refreshing tanginess. This acidity also allows me to clearly perceive the sweetness of the coffee!
