Soe Ae is the name of a village in Mae Tuen Subdistrict, Omkoi District, Chiang Mai Province. The Pga K’nyau community in Omkoi has been growing coffee since the era when His Majesty King Rama IX promoted coffee cultivation as an alternative to shifting cultivation and opium farming. One of the historic varieties grown here is Typica, with trees aged over 30–40 years—representing the beginning of coffee cultivation in that era.
The climate in Soe Ae is cool and humid all year round, allowing the coffee trees to thrive and produce excellent flavor. Over the past decade, continuous improvements in cultivation and processing have made Soe Ae better known as one of Thailand’s specialty coffee origins, with a wide variety of processing techniques. Last year, it reached 9th place in the national TSCA2025 competition (Honey Process).
This year at Prida, we sourced Soe Ae green beans in both Washed and Honey processes. The processing was done by Khun Saranyu Wanasomboon—and after roasting and cupping, we were truly impressed!
This Washed Soe Ae has a clear, easy-to-understand character. It stands out with bright citrus notes, especially kaffir lime and lemon, with a juicy honey-like sweetness. The balance is excellent. In the aftertaste, acidity and sweetness come together in harmony. You can notice the acidity lingering along the sides of the tongue and inner cheeks, while the sweetness feels juicy and coating down the throat. It’s a very enjoyable and playful coffee to drink.
The aroma and deliciousness of Soe Ae come from coffee grown in a forest-rich environment—one of our country’s natural treasures. Cool air, fertile soil, and dedicated farmers all come together to create this beautiful coffee for us to enjoy.
